Crafted with care in our brewery, Ichigo no awa is a naturally sparkling sake fermented with juicy, sun-ripened strawberries from Essex. These fresh strawberries are puréed and co-fermented with moromi (the primary sake mash), then undergo secondary fermentation in the bottle.
Rather than creating a simple “strawberry-flavoured” sake, we set out to craft something truly unique — a sparkling sake that only our expertise could deliver. Ichigo no awa captures the gentle sweetness of ripe strawberries, elevated by a refreshing, mouth-watering acidity, a soft savoury depth that lingers on the palate, and a clean, elegant bitterness that adds structure and complexity.
The result is a crisp, refined drink — bright and uplifting, yet beautifully layered — that invites you back for another glass.
