Why Did We Pasteurise Our Still Sake This Time?
This experiment is part of our ongoing efforts to deepen our understanding of the still (base) sake that serves as the foundation of our sparkling sake.
By analysing the base from multiple perspectives, we aim to uncover new insights and achieve even greater quality. Crafting sake, after all, is as much an art as it is a science.
