Shiitake Mushroom Sauce

200g of mushroom
1 tbsp of olive oil
2 tbsp of shio koji
Some red hot pepper if you like



  1. Finely cut mushroom. You can mix some differents types of mushroom.
  2. Heat olive oil in the pan and put all the mushroom until thoroughly cooked.
  3. Add shio koji and mix well. If you prepare red hot pepper, add it into the pan.


Add 10% shio-koji to the total amount of mushroom. Any mushroom can be used such as shiitake, mushroom, and others.
