1 pack of tofu
2 tbsp of shio koji
Wrap a whole tofu with paper towel to drain water for 24 hours in the fridge. (Put a plate on tofu.)
1. Remove the paper towel.
2. Apply shio koji on each side gently and evenly. Again wrap a whole tofu with paper towel and leave it for at least 3 days in a clean container.
3. 3 days later, remove a paper towel and cut the tofu. Put tofu on crackers and add any food you like!
This shio koji tofu tastes like cream cheese. Great match with olive oil, smoked salmon, and sweet jams & fruits! If you leave it longer, the taste will become more creamy.
