'awa before dawn'

“awa before dawn" is a special sake – the still (base) sake before the secondary fermentation of our core product, Classic awa. This is a Junmai Muroka Nama Genshu style (unfiltered, unpasteurized, undiluted), with 50% Rice Koji – more than double the amount generally used in standard sake production.

Our philosophy has consistently been to express ‘the beauty of nature's impermanence’, which is a fundamental idea in Japanese aesthetics.

The aesthetic concept is not solely about loving the fleeting moments of nature. For example, it is not only about the beauty of cherry blossoms in full bloom. It is equally moving to observe a branch about to bud and to imagine how the flower will bloom. Similarly, the beauty of nature is not limited to the moment of dawn. Gazing at the sky before dawn and imagining the scene at dawn is also part of the Japanese sense of beauty. In essence, beauty is not just about savouring its peak or appreciating each stage of its transformation; it’s about being aware of the entirety of its changes.

If classic awa is like a cherry blossom in full bloom, then 'awa before dawn' resembles a bud about to blossom. Similarly, while classic awa represents the beauty of the moment of dawn, 'awa before dawn' embodies the sky just before the first glimpse of light.
