This batch has been crafted through the fermentation with British blackcurrants harvested this summer.

The blackcurrants, which were freshly harvested, were first transformed into a puree and then fermented with moromi,main mash, during the initial fermentation. The photograph captures the specific stage of the first fermentation process.

After progressing through a secondary fermentation within the bottle, the batch was meticulously brought to completion via the delicate process of manual degorgement.

‘awa’- meaning bubbles in Japanese - is a hand crafted, limited edition naturally sparkling sake produced locally in the UK with Japanese craftsmanship. This limited batch is fermented with blackcurrants grown in Essex.

- Ingredients: Water, Rice, Yeast, Koji, blackcurrant
- Storage & Serving: Store refrigerated. Serve chilled in a flute (glass). Best consumed upon opening to capture its bubbly nature (bubbles may dissipate with re-storage).
