This batch has been crafted through the fermentation with British blackcurrants harvested this summer.
The blackcurrants, which were freshly harvested, were first transformed into a puree and then fermented with moromi,main mash, during the initial fermentation. The photograph captures the specific stage of the first fermentation process.
After progressing through a secondary fermentation within the bottle, the batch was meticulously brought to completion via the delicate process of manual degorgement.
