‘Limited Batch Series’ is a seasonal batch of naturally sparkling sake fermented with a variety of fresh/aged ingredients; some in stainless steel tanks and some in barrels. We’ve taken this approach to pursue our curiosity and bring the joy of naturally sparkling sake to everyone through the lens of going beyond boundaries.

Introducing Limited Batch Series 006: 'awa × blackcurrant'

This batch has been crafted through the fermentation with British blackcurrants harvested this summer.

The blackcurrants, which were freshly harvested, were first transformed into a puree and then fermented with moromi,main mash, during the initial fermentation. The photograph captures the specific stage of the first fermentation process.

After progressing through a secondary fermentation within the bottle, the batch was meticulously brought to completion via the delicate process of manual degorgement.

Beyond the invigorating tang and delightful bitterness, there's rice-derived umami and sweetness, all enveloped in gentle, delicate bubbles. Whether you're a devoted Sake enthusiast or new to this realm, we encourage you to give it a try. This presents an opportunity to explore the world of sake beyond its conventional boundaries.

It stands brilliantly on its own. We paired it with a green curry and were delighted by how the rich and spicy flavors of the curry complemented it exquisitely, showcasing the potential for unconventional pairings. Enjoy it paired with rich and savory dishes.

‘awa’- meaning bubbles in Japanese - is a hand crafted, limited edition naturally sparkling sake produced locally in the UK with Japanese craftsmanship. This limited batch is fermented with blackcurrants grown in Essex.

- Ingredients: Water, Rice, Yeast, Koji, blackcurrant
- Storage & Serving: Store refrigerated. Serve chilled in a flute (glass). Best consumed upon opening to capture its bubbly nature (bubbles may dissipate with re-storage).
