Limited Batch Series

‘Limited Batch Series’ is a seasonal batch of naturally sparkling sake fermented with a variety of fresh/aged ingredients; some in stainless steel tanks and some in barrels. We’ve taken this approach to pursue our curiosity and bring the joy of naturally sparkling sake to everyone through the lens of going beyond boundaries.

awa × mint

The second batch of this series is ‘awa × mint’. It is a naturally sparkling sake fermented with mint grown in Cornwall.

We infused the mint with pure brewing water until the liquid became a slightly pale yellow-green and then add it into the tank during the 1st fermentation, followed by the second fermentation in the bottle to make it naturally bubbly.

It is unpasteurized so the fermentation is still ongoing in the bottle and you can enjoy the beauty of the fleeting moments of nature.

The label design

The label of ‘awa × mint‘ was created by our Japanese designers Yuki and Yoshiyuki. The mint colour of the label perfectly matches the logo mark with Japanese traditional green colour, called Asagi-iro.

The text colour of ‘泡’ (awa), meaning bubbles in Japanese has been slightly modified from its original black to a grey gradient balance and harmonise with the mint colour.

The visuals and flavour of awa × mint will enable you to experience an incredible creation locally made in the UK with Japanese craftsmanship.

This product has a unique profile in the sake category : on the nose a bold mint and melon aroma and on the palate a balanced sweet and acidity profile with a twist of subtle mint. awa x mint stands well on its own in a flute glass or garnished with cucumber and a lime peel making it almost like a cocktail.

We encourage you to be as experimental as we have been with this batch to discover new ways to drink this unique combination.

- Ingredients: Water, Rice, Yeast, Koji (Aspergillus oryzae), Mint
- Storage & Serving: Store refrigerated. Serve chilled in a flute (glass). Best consumed upon opening to capture its bubbly nature (bubbles may dissipate with re-storage).
