On the palate, vibrant notes of crisp green apple and elegant white flowers unfold, beautifully balanced by a subtle savoury depth. The natural effervescence is fine and silky, lifting the flavours with refreshing clarity. Born purely from natural fermentation, each bottle engages all five senses — the appearance, aroma, taste, sound, and texture of its delicate bubbles.These bubbles are naturally formed through in-bottle fermentation, continuously evolving and transforming — even as you drink.

Every step of our brewing process — from rice washing and koji-making to initial fermentation, secondary fermentation, and hand-degorgement — is meticulously carried out using traditional skills and craftsmanship honed in Japan.
